When I watch the Matrix Trilogy, The Animatrix and keep up with the events on here in MxO, there's one thing I've always wondered. Why do the machines and Merovingian programs choose to have human forms or shells? I mean wouldn't that limit their capabilities in the Matrix? Do they take on human shells for our benefit, or do they do it for another reason? I was espically surprise to see The Architect in human form, you'd think that he'd be like this great big voice that is talking to Neo. So I guess the question is, what is the purpose and benefit for programs to take on human form/shells?
first of all why are there machines in the matrix?
to interact or to serve a system function
lets say agents were 20 foot tall giants... how many bluepills will see that and think "thats normal"
plus for the benifit of redpills that interact with them, a human is more likely to give and recieve a more natural response to something that appears to be human
if the architecht was say just a voice as you put it, odds are the responses from neo would have been completely different, neo might have smashed the place up, he might have took the other door, hell he might have taken both doors, however being in human form would have tried to get the response the machines wanted

Yea, but the Agents perform feats that even bluepills wouldn't accept, like taking a body of a bluepill over or dodging bullets at super fast speed, or even jump from one building to another that's too far for a regular human to jump.
the trick is the bluepills have to see the agents preforming these feats to doubt its happening, you as a blue pill see an agent, you assume fbi, if say the agent was a tomato, just looking at it would make you think, thats not right
the machines can suppress bluepill's memories and erase the few secs. in a transfer, or dodging bullets, however to suppress something that right off from the start is far fetched is going to be very difficult
addition: exiles are rouge machines in the matrix, they do not always keep with the machine conformity, they take on rsis of humans, ants, flies, birds, you name it

Probably why most of the action (not all, but most) take place outside of bluepill view, that and the Zion Operatives are trying to hide from the machines while inside the Matrix.
